About: Oscar and Francisca Chacón are third-generation coffee producers, but the coffee is more than just in their family heritage: It’s in their hearts and souls as well. The couple is committed to quality and innovation, and are among the very first farmers in Costa Rica to produce Honey and Natural process specialty coffee.

In 2005, after years of delivering their cherry to a cooperative for the going market price, they decided to join the brand-new “micromill revolution” and buy their own depulper to have more control over the quality and the price they received for their lots. “At first, we didn’t know what we were doing,” Oscar explains. “We were just experimenting.” That experimentation led to some of the most exciting new flavor profiles we have ever tasted: Now, the Chacons produce a wide range of Honey process coffees, modulating the drying time in order to create different effects in the cup.

Honeys at Las Lajas are treated like precious cargo, which is the secret to why they taste so good: This SL-28 lot was harvested at peak ripeness (21–22° Brix), sorted for optimum quality, depulped immediately, and dried meticulously in the family’s greenhouse with constant attention to its temperature and moisture content.

Necessity bred more innovation for the family when an earthquake in 2008 wiped out electricity and water to their area during the harvest. Unable to run the depulpers or to wash the mucilage off to produce Washed lots, Francisca took inspiration from her knowledge of African coffee production and quickly built raised beds on the property. Their Natural lots caught the attention of Cafe Imports’ founder Andrew Miller, and the rest is both history and our-story.

These days, Las Lajas focuses on several variations of both Honey and Natural process:

    • Yellow Honey: Coffee is turned hourly on raised beds for a few days, then transferred to a greenhouse and turned regularly.
    • Red Honey: Coffee is turned several times a day and dried for longer in the greenhouse.
    • Black Honey: Coffee is turned once a day.
    • Perla Negra Natural: Coffee dries directly in the sun for 10 days, rotating constantly, and then is transferred to bags and left for 2–3 days before being moved to raised beds.
    • Alma Negra: Drying starts in the greenhouse for a few days. Then it is brought to the greenhouse and piled up at night and moved to the raised beds during the sunshine hours.
    • Black Diamond: What makes this process different from all the rest, is the drying process.  It is still a honey process, but the drying period takes between 15 to 22 days.  The process is very similar to their regular honey process: starts with the rigorous harvesting standards, depulping and it’s let to dry the superficial humidity for one day on raised beds.  Then the beans are moved from the raised beds to the drying patio. The drying process takes more attention than the rest of their honeys.  Since it’s a slow drying process, they need to constantly check on the temperature and movement of the beans so they don’t get heated.  What they’re aiming for with this process is a slow dehydration, slower than usual, not allowing temperature to rise abruptly, everything under control measures.  Oscar explained that the concept comes from the process of drying coffee seeds for nursery, slowly drying it without compromising the embryo; a passive drying process.  With this process, they don’t want to harm the beans with high temperatures rather than allow the sugars of the mucilage to cold crystalize.  They look to obtain a sweeter, more clear and bright coffees with the Diamond process.

    Las Lajas Micromill-Finca Sabana Redonda-Honey ACES was a lovely coffee. After roasting (medium roast) the aroma was wonderful, redolent of plums and raisins, and dark chocolate coated almonds. It makes a very smooth cup of coffee (done with a pour over) and tastes of cocoa with an undertone of dark bitter chocolate (not just the sweeter cocoa).
    I drank it first unadulterated, no cream. It was smooth and wonderful. I then added cream (not half and half) and sipped it like a dessert drink enjoying every sip.
    If I were giving stars, 5 being the best, 1 the worst, this one gets 5 stars.

    Bought both high end Costa Rician $20 per lb beans and a regular $5 version all within the same flight. We roasted each set of beans 3 different ways and did blind tastings. We didn’t find the higher price coffees were any better than the $5 version. Our opinion.

    enjoy this bean alot. I roasted it city. Basically at 1st crack. I’m liking the Costa Rican ” stuff” among many others. I’m up to maybe 75 lbs of green beans( alot from Marty and Jane) . I’m a huge believer of loyalty to vendors with great service, taking pride in their business with passion. I get that feeling from Marty,haven’t spoken to Jane yet but I’m hoping to. That said I do also use other suppliers,just saying but always check here first.

    Ken,

    I agree – those Costa Rican Honeys are so tasty. How do you roast them? As I’ve aged, I’m roasting lighter in general – usually pulling right after first crack. But these honeys (and some of the anaerobic fermented beans we are now experimenting with) are a bit too tart for my palette at light roasts. Full of flavor, but the too bright acidity takes over and drowns out the more subtle tones.

    So my favorite roast for these beans is a Full City (Medium Dark). We keep the heat high until all of the green is gone and the beans are cinnamon. We lower the heat a bit and slow everything down through the develop phase. I think this really highlights the natural sweetness. Then once first crack begins we raise the heat again and even dial back the airflow a bit through the beginning of 2nd crack when we pull and quickly cool them.

    We also like them best if they are allowed to De-gas for at least 2 days. Mellow and flavorful cup.
