Normally each coffee cherry contains two beans. Occasionally a cherry will form with only one bean. Although a different shape, they have exceptional body, aroma, acidity and fragrance. Many believe that all that normally goes into two beans in a cherry are put into one bean giving it the extra zip.
Roast these in a frying pan if you like because they roll and keep moving. Very hard beans and roast to all roast profiles well.
